Delicious, Healthy Salmon & Rocket salad with a side of Baby Potatoes

Mmmm Yummy!

These hot summer days in New Zealand, cry out for easy and delicious meals to make at the end of the long, hot, summer days!


This Salmon and Rocket salad is so tasty, and quick and easy to make.


Ingredients for two people:

1/2 packet Rocket Lettuce

2 fillets of Fresh Salmon. ( +/- 200gm)

125g Cherry Tomatoes

100g Fresh mozzarella

8 Baby potatoes

Mint for garnish

Rock Salt for taste

2 tsp olove oil or Butter

Lemon to taste


Bring a pot of water to boil and add the baby potatoes.

Cook for 10 minutes or until a fork pushed into the middle of the potatoe goes in smoothly.

Take the salmon fillets out, and grill on a bbq with rock salt and a squeeze of lemon juice, for 3 minutes on each side.

Alternately, you can lightly fry the fillets on the stove with a smidgen of olive oil with rock salt and lemon juice to taste


In the meantime, lay the rocket on a plate, with the sliced cherry tomatoes, fresh mozzarella and a dribble of olive oil.


Remove the baby potatoes from the pot, and slice through.

Whilst hot, add the butter and gently mix with the rock salt through the potatoes.

Garnish with parsley.
